The Wirtschaftshauslabor combines traditional regional gastronomy with new culinary art and innovative concepts. Within the project, several outstanding chefs have joined forces to create an impulse to revive the rural tavern culture.
Jochen Neustifter is not only an award-winning star and haubenkoch, he is also responsible for the project Wirtshauslabor Traunsee und Almtal. Together with students from HLW Don Bosco Vöcklabruck, he runs the “Salzkammer-GUAD” in Haus Rosenkranz in Gmunden. The students are particularly interested in two topics that seem contradictory at first glance: traditional tavern dishes and ethnocuisine.
As part of interventa Hallstatt 2024, guests will be able to sample this innovative cuisine.
